BBQ Dry Rub

Makes 7 cups of dry rub.

Ingredients:
  • 2 1/2 cups white sugar
  • 2 1/2 cups brown sugar
  • 1 cup salt
  • 1/2 cup freshly ground black pepper
  • 1/2 cup paprika

Directions:

  1. In a medium bowl, mix together ingredients.
  2. Transfer to a container with a tight fitting lid.
  3. Rub onto pork 10 minutes prior to grilling.


Cajun Seasoning Mix

Makes 3 cups of mix.

Ingredients:
  • 1/2 cup white pepper
  • 1/2 cup garlic powder
  • 1/2 cup onion powder
  • 1/2 cup cayenne pepper
  • 1/2 cup paprika
  • 1/2 cup ground black pepper

Directions:

  1. In the container of a blender or food processor, combine all the ingredients, and process on high speed until reduced to a fine powder.
  2. Transfer to a container with a tight fitting lid and use as desired.


Dry Rub for Poultry

Makes 3 cups of seasoning.

Ingredients:
  • 1 cup brown sugar, packed
  • 1/2 cup chili powder
  • 1/2 cup paprika
  • 1/4 cup cumin
  • 2 teaspoons cayenne pepper (can use more)
  • 1/4 cup garlic powder
  • 1/4 cup mustard powder
  • 8 teaspoons salt
  • 8 teaspoons black pepper

Directions:

  1. Mix all spice ingredients together.
  2. Rub onto chicken (use as much as desired).
  3. Cover the chicken then place in the refrigerator for 6-24 hours. Grill or cook as desired.


Dry Rub for Ribs & Chicken

Makes 3 1/2 cups of mix.

Ingredients:
  • 1 1/2 cups brown sugar
  • 3/4 cup paprika
  • 1/2 cup salt
  • 3/4 cup ground black pepper
  • 2 tablespoons and 2 teaspoons garlic powder

Directions:

  1. Mix all spice ingredients together.
  2. Rub onto ribs or chicken (use as much as desired).
  3. Cover the meat then place in the refrigerator for 6-24 hours. Grill or cook as desired.


Emeril Lagasse's Essence

Makes 4 3/4 cups of seasoning.

Ingredients:
  • 1 1/4 cup sweet paprika
  • 1 cup salt
  • 1 cup garlic powder
  • 1/2 cup freshly ground black pepper
  • 1/2 cup onion powder
  • 1/2 cup cayenne
  • 1/2 cup dried oregano
  • 1/2 cup dried thyme

Directions:

  1. Combine all ingredients in a small mixing bowl and blend well.


Jamaican Jerk Dry Rub

Makes approximately 6 1/2 cups of seasoning.

Ingredients:
  • 1/4 cup and 2 tablespoons allspice
  • 2 cups salt
  • 1 1/3 cups and 1 tablespoon garlic powder
  • 1 cup white sugar
  • 1/4 cup chipotle chile powder
  • 2 tablespoons ground cloves
  • 1 1/2 teaspoons dried thyme leaves
  • 1/2 cup ground black pepper
  • 1 cup cayenne pepper
  • 1/4 cup ground cinnamon

Directions:

  1. Mix all spice ingredients together.
  2. To use, rub spice mix onto the meat of your choice. For best results, marinate for at least an hour to allow the flavors of the rub to penetrate the meat.


Old Bay Seafood Seasoning

Makes approximately 2 1/2 cups of seasoning.
Traditionally, this seasoning is used for steamed crabs, but is now used for fish, potato salad, potatoes, and other vegetables.

Ingredients:
  • 1/2 cup bay leaf powder
  • 1/2 cup celery salt
  • 1/4 cup dry mustard
  • 8 teaspoons ground black pepper
  • 8 teaspoons ground ginger
  • 8 teaspoons sweet or smoked paprika
  • 4 teaspoons white pepper
  • 4 teaspoons ground nutmeg
  • 4 teaspoons ground cloves
  • 4 teaspoons ground allspice
  • 2 teaspoons crushed red pepper flakes
  • 2 teaspoons ground mace
  • 2 teaspoons ground cardamom
  • 1 teaspoons ground cinnamon

Directions:

  1. Combine all ingredients in an airtight jar, mix thoroughly.
  2. Keep sealed until ready to use.


Steakhouse Seasoning

Makes approximately 3 cups of seasoning.

Ingredients:
  • 3/4 cup kosher salt
  • 3/8 cup onion powder
  • 3/8 cup garlic powder
  • 3/8 cup paprika
  • 3/8 cup celery seed
  • 3/8 cup sugar
  • 3/8 cup black pepper
  • 3 tablespoons nutmeg

Directions:

  1. Combine all ingredients in an airtight jar, mix thoroughly.
  2. Keep sealed until ready to use.


Taco Seasoning

Makes the equivalent of 16 packets of store bought seasoning.

Ingredients:
  • 5/8 cup chili powder
  • 1/3 cup paprika
  • 1/2 cup cumin
  • 2 1/2 tablespoons oregano, preferably Mexican oregano
  • 4 tablespoons garlic powder
  • 1/3 cup onion flakes (minced dried onion) or onion powder
  • 2 teaspoons cayenne pepper, omit if you like it mild and increase if you like it spicier
  • 1 1/4 tablespoons salt, adjust for your taste the salt helps to keep it fresh when storing

Directions:

  1. Mix all spices together and store in airtight container. Will keep for 6 months to a year.
  2. 7 teaspoons of this spice mix is the equivalent of one 1.25 oz packet of store bought taco seasoning. This recipe makes the equivalent of 16 spice packets.
  3. To make tacos - add 2 Tbsp and 1 tsp of seasoning mix to 1 lb ground meat that has been browned and drained of fat. Add 3/4 cup water and stir to blend. Cook til water has evaporated.
